Yes they all do, and Japanese phones generally include
a lot more functionality, DoCoMo also offers an add-on
QWERTY keyboard in a very pretty pink color.

Yes, DoCoMo/FOMA, but people almost don't use SMS.
Vodafone, yes.

Many phones in Japan have some chat capability, but not IM.

yes, that was essentially started in Japan.
