For DoCoMo the info in my previous message (or see http://www.nttdocomo.com/pr/2007/001364.html) should help.

For Softbank they don't have a similar plan but I believe the information on the access points is out on the internet unofficially. (The XDA Developer forums seem to be the place to go).

For AU my understanding is that the SIM is different so I don't think it would be possible to use, but would love it if someone with more expertise could confirm this.

So, if one of OpenMoko's successors to the Neo1973 has a wCDMA or other
Japan-compatible radios, how would one use it with the carriers here?
Buy a simple phone from SoftBank or au or docomo just for the SIM card
and access plan?

We can't buy individual SIM's and carrier contracts here in Japan, can we?
